No-Bake Butterscotch Haystacks

I love cookbooks but I feel that due to the ease of technology I don’t pull them out as much as I should. I mean there is something so surreal about holding a cookbook in your hands and pursuing the recipes. This year for Christmas, I decided I was going to pull out my cookbooks and commit to making at least five (5) cookie recipes that I have never made before.

This is my first new recipe. I remember eating these as a child in elementary school. I know – sugar for lunch at school – but I grew up in the 70s when sugar was acceptable.

I was so excited about trying a no-bake recipe to ease into the holiday baking season.

I found that these No-Bake treats are tasty enough to make for any occasion. Also they are perfect to make when you don’t wanna heat up your oven. These butterscotch haystacks are mounded with a mixture of peanut butter, butterscotch morsels, marshmallows and chow mein noodles for a winning combo!

  • Begin by lining a baking sheet with 30 cupcakes liners. If you don’t have cupcake liners, just line a baking sheet with parchment paper.
  • Bring about 1 inch of water to a boil in a double boiler, turn the heat down to a simmer and add the butterscotch chips. Occasionally stirring until the chips have fully melted.
  • Add the peanut butter and mix with butterscotch chips until fully incorporated.
  • Remove from heat.
  • Pour chow mein noodles to a large mixing bowl.
  • Pour the peanut butterscotch mixture over the chow mein noodles
  • Use a spatula or wooden spoon to gently toss the noodles in the butterscotch mixture until the noodles are evenly coated.
  • Once the mixture and noodles have cooled slightly, add the mini marshmallows and gently blend and toss until evenly distributed.

  • Use two tablespoons or your hands to form haystacks that fit comfortably in the cupcake liners. Allow the haystacks to sit out to set and cool completely before storing in a air tight container.
