My grandmother was not big on recipes.  She also never used a cookbook.  In her own words (in a letter she wrote to my niece, Summer)  “We just put it all together and cooked it”.  In this letter she did include a handwritten recipe for her favorite cake – Apple Pound Cake.  Her recipe, just like her letter, was very simple.  Her instructions were “Mix well.  Put into tube pan. Bake at 325 for 1 hour 20 minutes”.

I had never made this cake before as I found it among her recipes.  Ya’ll this cake was so good.  So moist with sweet apples, pecans and coconut.  I added a drizzle of caramel over the cake while it was still warm.  That delectable drizzle was definitely  as the say “the icing on the cake”.  This cake is the prefect cake to get you in that fall mood.  So Yummy.

Ingredients

  • 3 cups self-rising flour

  • 2 cup sugar

  • 1 1/2 cups vegetable oil

  • 3 large eggs

  • 1 cup Walnuts or Pecans

  • 1 cup of coconut

  • 2 teaspoon of vanilla

  • 3 chopped apples (I used Granny Smith apples)

  • 2 teaspoons cinnamon

Directions

  • As per my Grandmother’s instruction – Mix well, put into tube pan (Bundt pan).
  • Bake at 325 for 1 hour 20 minutes.

Notes

  • Just wanted to give a little additional directions since Grandma’s was straight to the point. Additional Instructions: Mix the sugar, oil, eggs, vanilla until smooth. Add Flour and cinnamon. Mix well. Stir in apple, coconut and pecans until blended. I also drizzled cameral over the cake while still a little warm.
